SPINACH AND MOZZARELLA SNACK MUFFINS

Ingredients:

Surprise your family and friends over the weekend with these delicious spinach and mozzarella snack muffins with one of the ingredients being Iecavnieks Rapeseed oil with celery aroma.

Method:

Start with the spinach - wash it, dry and blend until smooth. If the spinach are difficult to blend, add some milk. Mix flour with baking powder, sugar and salt. Whisk the egg in a separate bowl, add spinach, oil and milk. Slowly combine the egg mixture with the flour mixture. Mix the dough until smooth. Cut the mozzarella cheese into smaller pieces and add to the dough.
Heat the oven to 200°C and bake for 25 minutes.

When the muffins have cooled down, garnish with fresh cheese, cherry tomatoes, cucumbers, greens and Iecavnieks Hemp protein.
